Another new Mexican coffee from Oaxaca! Courtesy of our friends at Pipe & Tabor Coffee.

Guadalupe Miramar is a small mountain community in the Tlaxiaco district, Santa María Yucuhiti, in the Mixteca. The farms sit near the center of town, close enough to the highway that producers don't need mules to move their harvest. Farms are small and worked by family and community labor, with coffee pulp used as fertilizer. Most producers process at home, fermenting 48 hours in wooden tanks or plastic cylinders and drying 10 to 14 days on raised beds. Native shade trees like ice cream bean and pine provide food, medicine, building material, nitrogen fixing, and water retention alongside shade.

Until 2018, the area was served by a single cooperative. That year a group of producers went looking for markets that would reward quality, and found the Red Fox Mexico team. They made their first purchase that season and have worked with them since, trading feedback for steady gains in quality and yield. The community now elects a steering committee each year and plans to keep working as it does: organized, democratic, and independent.

A clear look at the original Bourbon lineage brought to the Americas, still grown here in close to its pure form. Ground fragrance shows fresh red fruit, orange peel, and caramel. The cup leads with a bright acidity of mandarin orange, then settles into brown sugar, amber honey, with a hint of almond.
