New washed Ethiopian coffee for 2025! In the past few years we’ve favored the excellent naturally processed coffees of Guji, but haven’t featured a classic washed profile. This lot from the sub-kebele of Bookkisa changes that, and showcases all the flavors that characterize one of the most uniqie coffee producing regions of the world. Layered citrus, up-front florality, ripe melon.
This coffee is handled gently in the roaster, and dropped lighter to showcase the delicate aromatics, and preserve it’s inherent sweetness. We prefer it black, but however you drink it we hope you enjoy!

“We have been working with Ture Waji since the very beginning of Sookoo. In those days Ture was managing farms/production in Guji, southern Ethiopia, a part ofEthiopia that Ture knows as well as anyone (and better than most). This is, of course, where Ture gets his nickname, "The King of Guji." The land, the people, the coffees... Ture knows them all better than anyone we have ever met. Since Sookoo's inception, all production had been focused on naturally-processed coffees. Last year Ture produced washed coffee from only Bookkisa, a sub-Kebele we have been purchasing naturally processed coffees from for many years. This year, in addition to this stellar lot from Bookkisa, which is rife with all the flavors we adore Guji coffees for - melon, hops, black tea, florals - Ture produced a lot from Tima, another Shakiso sub-Kebele.”
