James Fernandez Vivas owns La Laja, where 5 hectares are planted with coffee, both Castillo and Colombia varieties.

He harvests the cherry every 25 days during harvest and places the intact cherries in a hopper to ferment for 12 hours. Then he de-pulps and sorts before dry fermenting for 12 hours.

The mucilage is washed off three times and the coffee is dried in parabolic dryers for 10–12 days.
